1 tsp dried rosemary (for potatoes)
Salt & freshly cracked black pepper to taste
Twist for Broccoli: ¼ cup grated Parmesan cheese 🧀
🍄🧀🌿 Creamy Sauce: Double Mushroom Alfredo with Pesto Hints:

2 tbsp butter 🧈
16 oz (2 packs) cremini mushrooms, sliced (this is your “double mushroom”!) 🍄🍄
3 cloves garlic, minced 🧄
¼ cup fresh basil leaves 🌿 (optional, for pesto hint)
1 ½ cups heavy cream
¾ cup grated Parmesan cheese 🧀 (for sauce)
Salt & freshly cracked black pepper to taste
Instructions:
Prepare Garlic Potatoes & Roasted Broccoli (with Parmesan Crust):

Preheat oven to 200°C (400°F). Line two large baking sheets with parchment paper.
For potatoes: In a large bowl, toss potato cubes with 2 tbsp olive oil, 3 cloves minced garlic, dried rosemary, salt, and pepper. Spread in a single layer on one prepared baking sheet.
For broccoli: In the same bowl, toss broccoli florets with 1 tbsp olive oil, 2 cloves minced garlic, salt, and pepper. Spread in a single layer on the second prepared baking sheet.
Roast both potatoes and broccoli for 20-25 minutes. After 20 minutes, remove broccoli from the oven, sprinkle evenly with ¼ cup grated Parmesan cheese, and return to the oven with the potatoes for another 5-10 minutes, or until both are golden brown, tender, and crispy (broccoli should have a lovely Parmesan crust).
Prepare Garlic Butter Chicken:

While vegetables roast, in a large skillet, melt 2 tbsp butter with 2 tbsp olive oil over medium-high heat.
Add 4 cloves minced garlic and sauté for 30 seconds until fragrant.
Add chicken pieces/cutlets to the skillet. Season with Italian herbs, salt, and pepper. Cook for 5-7 minutes (for bites) or 2-3 minutes per side (for cutlets), stirring/flipping occasionally, until cooked through and nicely browned. Set aside.
Prepare Double Mushroom Alfredo with Pesto Hints:

In the same large skillet (no need to clean from chicken), melt 2 tbsp butter over medium heat.
Add 16 oz sliced cremini mushrooms and 3 cloves minced garlic. Cook, stirring occasionally, for 8-10 minutes until mushrooms have released their liquid and are deeply browned and tender. This concentrated mushroom flavor is key!
Stir in fresh basil leaves (if using for pesto hint) and cook for 30 seconds.
Pour in 1 ½ cups heavy cream and bring to a gentle simmer.
Stir in ¾ cup grated Parmesan cheese until melted and smooth. Season with salt and freshly cracked black pepper. Keep warm over very low heat.
Assemble & Serve:

Add the cooked garlic butter chicken to the double mushroom Alfredo sauce and gently stir to coat.
Divide the crispy garlic potatoes and Parmesan-crusted broccoli among plates or bowls.
Spoon the creamy, rich Mushroom Alfredo Chicken mixture generously over the potatoes and broccoli.
Serve immediately and enjoy this incredibly hearty and satisfying meal!
Tips for Success:
Double Mushroom Sauté: Don’t rush the mushroom cooking in the sauce. Allowing them to brown deeply brings out their maximum umami flavor.
Parmesan on Broccoli: The grated Parmesan added towards the end of roasting helps create a distinct, crispy cheese crust.
Chicken Doneness: Avoid overcooking the chicken to keep it juicy and tender.
Vegetable Spacing: Ensure potatoes and broccoli are spread in a single layer on their baking sheets and not overcrowded for maximum crispiness. Use two sheets if necessary.
Sauce Consistency: If the Alfredo sauce seems too thick, you can thin it with a splash of warm chicken broth or milk.
